I'm posting the low carb meal I made! Cauliflower "mac" and cheese and zoodles with spaghetti sauce. 
For everything I am eating, it is 24 g of carbs. For my insulin doses I count carbs. I use an insulin to carb ratio that is now plugged into my pump. I do 1 unit to every 15 grams of carb. [Update: my blood sugar management team changed this to 1 unit for every 12 grams of carb since my blood sugars were not in range after eating.] So this dinner is only 2 units of insulin. Plus its full of healthy veggies and totally vegetarian. I have to count the carbs in everything I eat! Plus I used to have to do a shot every time I ate. Now I just press a few buttons on the pump which makes it so much easier!
Jeff even liked it! And even more awesome... my dad ate some of the cauliflower mac and cheese! My dad doesn't like anything I make!

For the Zoodles I used a jar of pasta sauce from walmart.

I sautee after I salt for 20 minutes after cutting them.
